Dr Rachel Gibson

Dr. Rachel Gibson is a UK Registered Dietitian and Lecturer in the Department of Nutritional Sciences at King’s College London. Rachel completed her PhD at Imperial College London, where she investigated how working hours influence dietary intake and cardio-metabolic health in British police force employees. Rachel’s research aims to understand how occupational factors, such as the work environment and working hours influence our diet and health. Rachel has received research funding from the British Nutrition Foundation and Diabetes UK to understand more about how shift work impacts employee diet and health. Her long-term research aim is to contribute to evidence-based dietary recommendations to improve the health of shift workers. Rachel is accredited by the British Dietetic Association Work Ready Programme to deliver corporate nutritional wellbeing programmes. Prior to training as a Dietitian, Rachel worked in business management across various industries including the food service sector.
