Dave and Sue Fleming are co owners of The Gluten Free Kitchen.
After a career in the Metropolitan Police and having run her own successful country pub, Sue Fleming became a self-employed, freelance chef. It was at this time she encountered customers, mainly visiting tourists, with food allergy problems, in particular customers with Coeliac Disease who were allergic to gluten and wheat. This became a ‘challenge’ as Sue was determined to provide gluten free food which tasted as good as, or better than, the equivalent counterpart containing the offending gluten and/or wheat. Within a very short time she discovered that her cakes were so good customers couldn’t tell the difference! Her pastry actually tasted good. Not like the ‘cardboard’ effect which was prevalent in existing products available at that time. As word spread she began supplying products locally and ‘Sue’s Gluten Free Kitchen’ was born.
Now into it’s 14th year, spreading further afield to a countrywide market and with numerous national awards for cake, pies and bread, demand has continued to grow, and the bakery is in it’s 4th location based in Leyburn, North Yorkshire. During the ensuing years Sue has supplied products for the Queen’s Royal Garden parties, the National Trust, and is now supplying three products into two supermarket chains, as well as a range of food items to numerous independent outlets throughout the country, a vibrant ‘on line’ mail order, several wholesalers as well as attending food fayres throughout the UK. Amongst her best sellers there are custard tarts, bakewell tarts and ‘Ready to Roll’ pastry. A lot of the products are also dairy-free, egg-free and all are soya-free.
As her business continues to grow Sue continues to gain enormous satisfaction from what she does. As a ‘foodie’ she feels she has finally realised that she has something to contribute to a market which historically has a rather poor reputation in taste terms!
