The Michelin-star chef and TV presenter, who shed 11 stone in three years, talks about his own health and diet experiences and how the food and drink industry can be ambassadors for changing dietary behaviour.

A champion of British produce, food and drink in his own pubs and restaurants and the author of several best-selling cookbooks, Tom attributes his weight loss success to a low-carb "dopamine diet", using ingredients he says release the "happy hormone", which help people lose weight while improving their mood, as well as cutting out alcohol.
