London South Bank University will be showcasing their 'Insects au Gratin' Project at ‘Alternative Edibles’ during Food Matters Live, and exploring whether eating insects could be a potential solution to some of the world’s food concerns. ‘Insects au Gratin’ is also an investigation into the development of a 3D printer that uses insect protein based flour as a building medium for the production of sustainable food products.
